

I used the recipe from my previous post, although I forgot the nutritional yeast and added way less onions and mushrooms because frankly, I don’t like them. In my defense, I’ve had more mushrooms this week than in my entire life so far. So, plus one. Overall. Not bad. I added a couple tablespoons of organic, mild salsa, toast, and Smart Bacon.

Well, I meant to write about earth day…
I’m on Day 3 of my Vegan Challenge, or How I Forgot About Taste and Learned to Love Legumes. I’ve spent nearly $150 in the past three days on groceries. Mostly things I can take to work and heat up, but also on a variety of spices which invariably makes up the bulk of the vegan recipes I’ve found so far. Besides the cupcakes and the blueberry pancakes, both of which were delicious, I haven’t really made anything yet. This weekend, I’m working on Ancho Lentil Soup and Scrambled Tofu, so hopefully, those will turn out and I won’t resort to chips and salsa for the third time this week.
